BARNCLIFFE BRIE - 200g wedge
Barncliffe cheeses are made in small batches by hand by Ruth Baker, in her dairy in Shelley, just 2.5 miles from our farm. All Barncliffe cheeses are vegetarian, and are made using pasteurised milk, which comes from a herd of Meuse-Rhine-Issel cows that graze just half a mile away from the dairy. Ruth collects their milk in churns straight from the farm each morning.
Barncliffe Brie is a creamy brie with a smooth buttery texture. The golden-yellow breakdown under the rind has a rich earthy flavour which balances the fresher, sometimes citrussy notes of the cheese's firmer centre. The rind lends a mushroomy taste, and seasonally the cheese can feature clear flavours of nuts, citrus, vegetables, or even pepper. Flavours develop with age, moving from fresh sharp fruit flavours when the cheese is very young, to deeper, sweeter vegetable flavours when ripe. At 4 weeks from its use-by date, the brie will offer a perfect balance of oozing breakdown and firm centre.
