Ice (Mint) tea.
This is a perfect recipe for the heat of a sunny summers day, inspired by a memorable trip to Morocco many years ago, when we enjoyed a similar drink in the heat of the midday sun, sat out, soaking up the atmosphere, overlooking the Casa Barata market square in Tangiers.
A grown up drink, suitable for children of all ages too, because it's naturally caffeine free.
Makes 1/2 a litre (2 glasses)
Ingredients:
- 1 Peppermint tea bag
- 50g of fresh mint leaves
- 1 tablespoon of pure runny honey
- Juice of 1/2 a lemon
- 1/2 Lemon (Thinly sliced)
- 1 teaspoon white sugar (optional)
Preparation:
1. Begin by bringing 1/2 a litre of water to boil. Then add the peppermint tea bag and let it steep for 3 minutes.
2. Lower the heat slightly and add the fresh mint leaves, the lemon juice, and the honey. If you enjoy a sweeter drink, then add the optional sugar now. Allow these ingredients to infuse over a gentle heat for another 5 minutes.
3. Turn off the heat, then strain the tea through a sieve, and allow it to cool.
To serve:
Pour over a generous glassful of ice cubes and decorate with a lemon slice and a sprig of fresh mint. Can be easily adapted into a cocktail by adding a splash of 15 year dark rum at the end.
